Ingredients
1 baguette
2 ripe peaches
1 cup whole milk ricotta
1 tablespoon olive oil
Pinch of sea salt
1/4 cup blue cheese crumbles
1/4 cup balsamic reduction
Fresh mint leaves
Instructions
1. Slice baguette into 3/4-inch slices and brush with olive oil. Toast in a skillet or oven at 375°F for 8–10 minutes until golden and crisp.
2. In a bowl, combine ricotta with olive oil and sea salt. Whip until smooth and creamy.
3. Cut peaches in half, remove pits, and brush cut sides with olive oil. Grill for 2–3 minutes per side until charred, then slice into quarters.
4. Spread whipped ricotta over each toasted baguette slice.
5. Add blue cheese crumbles on top of ricotta.
6. Place a slice of grilled peach on each crostini.
