Instructions

1. In a bowl, beat together 8 oz of softened cream cheese, 1/3 cup powdered sugar, and 1/2 teaspoon vanilla extract until smooth. Portion into 12 small balls and freeze on a parchment-lined tray for at least 30 minutes.

2. In a large bowl, cream 1/4 cup unsalted butter with 1/2 cup granulated sugar until fluffy. Beat in 1 large egg.

3. Stir in 1/2 cup buttermilk, 1 tablespoon red food coloring, and 1/2 teaspoon vanilla extract until combined.

4. In a separate bowl, whisk 3/4 cup flour, 1 tablespoon cocoa powder, 1/2 teaspoon baking soda, and 1/8 teaspoon salt.

5. Gradually add dry ingredients to the wet mixture until smooth.

6. Preheat oven to 350°F (175°C). Line a mini muffin tin with 12 paper liners.
