Ingredients
3/4 cup all-purpose flour
2 tablespoons unsweetened cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
3 large eggs
1/2 cup granulated sugar
2 tablespoons vegetable oil
1/2 cup buttermilk
1 teaspoon vanilla extract
1 tablespoon red food coloring
8 ounces cream cheese, softened
4 tablespoons unsalted butter, softened
1 cup powdered sugar
1 teaspoon vanilla extract (for filling)
Powdered sugar, for dusting towel and topping
Instructions
1. Preheat oven to 350°F and line a 10×15-inch jelly roll pan with parchment paper. Lightly grease the paper.
2. In a bowl, sift together the flour, cocoa powder, baking powder, and salt.
3. In another bowl, beat the eggs until thick and pale, about 5 minutes. Gradually beat in granulated sugar.
4. Mix in oil, buttermilk, vanilla, and red food coloring until smooth.
5. Gently fold the dry mixture into the wet mixture until fully combined.
6. Spread batter evenly into the prepared pan. Bake for 12–14 minutes, until the cake springs back when pressed.
7. Immediately invert cake onto a kitchen towel dusted with powdered sugar. Peel off parchment and roll the cake in the towel starting from the short side. Let it cool completely.
8. For the filling, beat cream cheese and butter until smooth. Add powdered sugar and vanilla; beat until creamy.
9. Unroll the cooled cake, spread the filling evenly, and gently reroll the cake without the towel.
10. Wrap in plastic wrap and chill for at least 1 hour before slicing. Dust with powdered sugar before serving.
Notes
Use a towel dusted with powdered sugar to prevent sticking when rolling the cake.
Make sure to roll the cake while still warm to avoid cracks.
Let the cake chill fully before slicing for clean, beautiful spirals.
