1/4 cup ketchup (plus more for topping)
1 tablespoon Worcestershire sauce
1/2 cup finely minced yellow onion
2 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon smoked paprika (optional)
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup finely shredded carrot (optional)
2 tablespoons chopped fresh parsley (optional)
2 tablespoons ketchup (for glaze)
1 tablespoon brown sugar (for glaze, optional)
Instructions
1. Preheat the oven to 375°F (190°C) and lightly grease a standard 12-cup muffin tin or line the cups with parchment-style liners.
2. In a large mixing bowl, whisk together the egg, breadcrumbs or quick oats, milk, 1/4 cup ketchup, Worcestershire sauce, Italian seasoning, smoked paprika if using, salt, and black pepper until well combined.
3. Add the ground turkey, minced onion, minced garlic, and shredded carrot (if using) to the bowl. Use clean hands or a spatula to gently mix just until everything is evenly incorporated without overworking the meat.
