Ingredients

2 boneless skinless chicken breasts, cut into strips

4 pita breads

2 cups chopped romaine lettuce

1 cup diced cucumber

1 cup diced tomatoes

1/4 cup thinly sliced red onion

1/3 cup sliced kalamata olives

1/2 cup crumbled feta cheese

1/2 cup tzatziki sauce

2 tablespoons chopped fresh parsley


Instructions

1. In a medium bowl, toss the chicken with olive oil, lemon juice, garlic, oregano, salt, and black pepper until evenly coated.

2. Heat a skillet over medium-high heat and cook the chicken for 8 to 10 minutes, stirring occasionally, until golden and fully cooked through.

3. While the chicken cooks, chop the romaine, cucumber, tomatoes, and red onion, then slice the olives and set everything aside.

4. Warm the pita breads in a dry skillet, microwave, or low oven until soft and pliable.

5. Fill each pita with romaine, warm chicken, cucumber, tomatoes, red onion, olives, and feta cheese.

6. Spoon tzatziki over the top, sprinkle with fresh parsley, and serve immediately.

Notes

Use warm pita so it folds easily and does not crack while filling.
