Ingredients
2 cans chickpeas, drained and patted dry
1/2 medium onion, roughly chopped
3 cloves garlic
1 cup fresh parsley
1 teaspoon ground cumin
1 teaspoon ground coriander
3 tablespoons all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons olive oil, divided
Instructions
1. Drain the chickpeas well and pat them dry with paper towels to remove excess moisture.
2. Add the chickpeas, onion, garlic, and parsley to a food processor and pulse until the mixture is finely chopped but still has some texture.
3. Transfer the mixture to a bowl if needed, then stir in the cumin, coriander, flour, baking powder, salt, and black pepper until fully combined.
4. Let the mixture rest for 5 minutes so it can firm up slightly and become easier to shape.
5. Form the mixture into small patties or compact balls, pressing each one firmly so it holds together.
6. Heat 2 tablespoons of olive oil in a skillet over medium heat.
7. Cook the falafel in batches for 3 to 4 minutes per side, adding the remaining oil as needed, until golden brown and crisp on the outside.

Notes
Drying the chickpeas well is one of the most important steps because too much moisture can make the falafel fall apart.
Do not puree the mixture until smooth. A little texture helps the falafel stay light and gives it a better bite.
