Ingredients
1 3/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1 cup pumpkin puree
3/4 cup brown sugar
2 large eggs
1/2 cup vegetable oil
1 teaspoon vanilla extract
8 ounces cream cheese, softened
1 1/2 cups powdered sugar
2 tablespoons freshly brewed espresso
1/2 teaspoon ground cinnamon
Instructions
1. Preheat the oven to 350°F and grease a 9×13-inch baking pan. Line with parchment if desired.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
3. In a separate large bowl, whisk together the pumpkin puree, brown sugar, eggs, oil, and vanilla until smooth.
4. Stir the dry ingredients into the wet ingredients until just combined. Do not overmix.
5. Pour the batter into the prepared pan and smooth the top evenly.
6. Bake for 28 to 32 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack.
7. In a medium bowl, beat cream cheese until smooth. Add powdered sugar gradually and beat until fluffy.
8. Stir in the brewed espresso and cinnamon until the frosting is creamy and spreadable.
9. Frost the cooled cake generously and dust with extra cinnamon if desired.
10. Cut into squares and serve or store covered in the fridge.
Notes
Make sure your pumpkin puree is thick, not watery. Blot with paper towels if needed.
Let the cake cool fully before frosting to prevent melting.
Add espresso to the frosting slowly to keep the texture thick and spreadable.
