Ingredients

1 cup pumpkin puree

2 large eggs

1/3 cup brown sugar

1 1/4 cups whole milk or half-and-half

1/2 teaspoon cinnamon

1/4 teaspoon ground nutmeg

1/8 teaspoon ground ginger

1/8 teaspoon salt

1 teaspoon vanilla extract


Instructions

1. Preheat oven to 325°F and place ramekins in a deep baking dish.

2. Whisk pumpkin puree, eggs, and brown sugar in a mixing bowl until smooth.

3. Slowly whisk in milk, then add cinnamon, nutmeg, ginger, salt, and vanilla.

4. Strain mixture through a fine mesh sieve for a smooth texture.

5. Pour custard into ramekins evenly.

6. Pour hot water into the baking dish until halfway up the ramekins.

7. Bake for 35–45 minutes until the edges are set and center slightly wobbly.

8. Remove ramekins, cool at room temperature, then refrigerate for at least 2 hours before serving.

Notes

Strain the custard before baking for the silkiest texture.

Use fresh ground spices for the best flavor impact.

Don’t overbake—remove when slightly jiggly in the center; they’ll set in the fridge.
