Ingredients

1 cup pumpkin puree

1 cup brown sugar

0.5 cup granulated sugar

0.5 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1.5 cups all-purpose flour

1 teaspoon baking powder

0.5 teaspoon baking soda

0.5 teaspoon salt

1.5 teaspoons ground cinnamon

0.5 teaspoon ground nutmeg

0.25 teaspoon ground cloves

0.5 cup flour (for topping)

0.5 cup brown sugar (for topping)

1 teaspoon ground cinnamon (for topping)

0.25 cup melted butter (for topping)

1 cup powdered sugar (for glaze)

2 tablespoons milk (for glaze)

0.5 teaspoon vanilla extract (for glaze)

Instructions

1. Mix brown sugar, flour, cinnamon, and melted butter to make the crumb topping. Set aside.

2. Whisk pumpkin puree, sugars, oil, eggs, and vanilla extract in a large bowl until smooth.

3. In a separate bowl, mix flour, baking powder, baking soda, salt, and spices.

4. Gradually combine the dry ingredients with the wet until just incorporated.

5. Pour batter into a greased 9×13-inch baking dish and top with prepared streusel.

6. Bake at 350°F for 35-40 minutes, until a toothpick inserted comes out clean.

7. Let the cake cool slightly before glazing.

8. Mix powdered sugar, vanilla, and milk to form the glaze and drizzle over the warm cake.

Notes

Use ceramic bakeware for even baking and a tender crumb.

Let the streusel sit for a few minutes before sprinkling to form nice chunks.

Do not overbake — remove from oven once the center is just set.
