Ingredients
1 can pumpkin puree
1 cup brown sugar
0.5 cup granulated sugar
2 large eggs
0.5 cup vegetable oil
1.75 cups all-purpose flour
1 teaspoon baking soda
0.5 teaspoon salt
1.5 teaspoons ground cinnamon
0.5 teaspoon ground nutmeg
0.25 teaspoon ground cloves
Instructions
1. Preheat oven to 350°F and grease your mini loaf or regular loaf pans.
2. In a large bowl, whisk pumpkin puree, brown sugar, granulated sugar, eggs, and vegetable oil until smooth.
3. In a separate bowl, mix flour, baking soda, salt, cinnamon, nutmeg, and cloves.
4. Fold the dry ingredients into the wet mixture gently until just combined.
5. Pour batter into prepared pans evenly.
6. Bake for 35–40 minutes (mini loaves) or 55–65 minutes (standard loaf) until a toothpick comes out clean.
7. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Let the bread rest overnight for deeper flavor and better texture.
Use metal pans for even baking and soft edges.
