Ingredients
1.5 pounds Polish kielbasa sausage, sliced into thick coins
1 medium yellow onion, thinly sliced
3 cups sauerkraut with juice
4 Yukon Gold potatoes, peeled and cubed
1 teaspoon caraway seeds (optional)
Salt to taste
Black pepper to taste
Instructions
1. Slice kielbasa into thick coins and brown them in a Dutch oven over medium heat.
2. Remove sausage and set aside. Add sliced onions to the pot and sauté until soft and golden.
3. Add the cubed potatoes and stir to coat them in the oil and onion mixture.
4. Add sauerkraut (with juice) and stir to combine. Return the sausage to the pot and nestle into the kraut.
