Ingredients
8 apples
3 cups granulated sugar
1 cup light corn syrup
1 cup water
1 teaspoon pineapple flavoring
1/2 teaspoon lemon extract
Yellow gel food coloring
Wooden sticks
Parchment paper
Instructions
1. Wash and dry the apples thoroughly to remove wax, then insert wooden sticks into the tops and place on parchment paper.
2. In a heavy-bottomed saucepan, combine sugar, corn syrup, and water. Heat on medium-high, stirring gently until sugar dissolves.
3. Once sugar is dissolved, stop stirring and let mixture boil until it reaches 300°F (hard crack stage) on a candy thermometer.
4. Remove from heat and immediately stir in pineapple flavoring, lemon extract, and a few drops of yellow gel food coloring.
5. Tilt the pan and dip each apple into the candy, turning to coat completely, then place back on parchment to set.
6. Let the apples cool and harden at room temperature before serving.
Notes
Use a stainless steel saucepan for best heat distribution and control.
Scrub apples well—residual wax prevents candy from sticking.
Work quickly once candy reaches temperature—it hardens fast.
