Ingredients

1 cup dill pickle juice

4 boneless chicken thighs

1 cup buttermilk

1 large egg

1 cup all-purpose flour

1⁄3 cup cornstarch

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1⁄2 teaspoon black pepper

1 1⁄2 to 2 cups vegetable oil (for frying)

4 brioche buns

1⁄4 cup mayonnaise

1 tablespoon Dijon mustard

12 to 16 slices dill pickles


Instructions

1. Place chicken thighs in a bowl or bag with dill pickle juice. Refrigerate for at least 2 hours or overnight.

2. In a bowl, mix buttermilk and egg. Remove chicken from brine and add to this mixture. Let sit 20 minutes.

3. Combine flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper in a dish.

4. Dredge chicken in the flour mixture, pressing to coat well. Let rest on a rack for 10 minutes.

5. Heat oil in a skillet to 350°F. Fry chicken 5–6 minutes per side until golden and 165°F inside. Drain on paper towels.

6. Toast brioche buns. Mix mayonnaise and Dijon mustard and spread on buns. Add chicken and pickles. Serve hot.

Notes

Let the breaded chicken sit before frying to prevent the coating from falling off.

Don’t overcrowd the skillet—fry in batches for even cooking.
