Description

Turn your favorite sandwich into a creamy, cozy bowl of warmth with this Philly Cheesesteak Soup. It combines all the iconic flavors—tender shaved beef, sautéed peppers and onions, melted provolone—into one ultra-comforting dish that begs to be ladled into bowls and topped with toasted bread or cheese crisps. Perfect for quick dinners, cold-weather comfort food, or game day gatherings, this easy recipe is your go-to for hearty dinner ideas and satisfying comfort food.

Ingredients

2 tablespoons olive oil

2 tablespoons unsalted butter

1 medium yellow onion, diced

1 green bell pepper, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 pound shaved ribeye or sirloin steak

4 cups beef broth

1 tablespoon Worcestershire sauce

4 ounces cream cheese

1 cup shredded provolone cheese

1 cup shredded mozzarella cheese

Salt, to taste

Black pepper, to taste

1 tablespoon cornstarch (optional, for thickening)

2 tablespoons cold water (for slurry, optional)

Instructions

1. Heat olive oil and butter in a large pot over medium heat. Add diced onion and bell peppers and sauté for 5–7 minutes until soft.

2. Stir in minced garlic and cook for 1 minute until fragrant.

3. Add shaved beef and cook for 3–4 minutes until browned. Season with salt, pepper, and Worcestershire sauce.

4. Pour in beef broth and bring to a simmer. Cook for 10 minutes to allow flavors to deepen.

5. If using, stir in the cornstarch slurry (mix cornstarch and cold water first) to thicken the soup slightly.

6. Lower the heat and stir in cream cheese until melted.

7. Add provolone and mozzarella cheese, stirring continuously on low heat until fully melted and smooth.

8. Taste and adjust seasoning. Serve hot with toasted bread or extra cheese on top.

Notes

Always add the cheese slowly over low heat to avoid clumping.

For a bread bowl version, hollow out small round loaves and ladle the soup inside.

You can substitute ground beef for shaved steak if needed.
