Ingredients
2 cups basmati rice
1/2 cup barberries
1/4 cup slivered almonds
1/4 cup pistachios
1/4 cup sugar
1/4 cup chopped candied or blanched orange peel
4 tablespoons butter or ghee
1 pinch saffron
2 tablespoons hot water
Salt to taste
Optional: 1 thinly sliced potato for tahdig
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
1/4 teaspoon ground cumin
Instructions
1. Rinse basmati rice until water runs clear and soak in warm salted water for 30 minutes.
2. Bring a large pot of salted water to boil and parboil the rice for 5–7 minutes until al dente. Drain.
3. In a pan, melt 2 tbsp butter. Add barberries, almonds, pistachios, sugar, and orange peel. Stir until coated and fragrant.
4. In the same pot, melt 2 tbsp butter. Layer thin potato slices if using. Add alternating layers of rice and jeweled mix.
5. Wrap the lid with a towel and steam the rice on low heat for 30–45 minutes.
6. Bloom saffron in 2 tbsp hot water. Drizzle over rice before serving.
7. Flip onto platter for tahdig reveal and garnish with remaining jeweled mix.
Notes
Soak the rice beforehand to help it cook evenly and stay fluffy.
Toast the nuts lightly to enhance their flavor without burning them.
Don’t skip the towel-wrapped lid—it’s key for capturing steam and perfect texture.
