Ingredients

2 tablespoons holiday sprinkles, optional
Instructions
1. Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper.
2. Beat 1 cup softened butter with granulated sugar until light and creamy.
3. Mix in the egg, vanilla extract, and peppermint extract until smooth.
4. In a separate bowl, whisk together flour, baking powder, and salt.
5. Add the dry ingredients to the butter mixture and mix just until a soft dough forms.
6. Press the dough evenly into the prepared baking pan.
7. Bake for 18 to 22 minutes, or until the edges are lightly golden and the center looks set.
8. Let the cookie base cool completely before frosting.

Notes
Do not overbake the cookie base. Pull it from the oven when the center looks set and the edges are just lightly golden.
