Ingredients

1 3/4 cups all-purpose flour

1/2 cup unsweetened cocoa powder

3/4 cup granulated sugar

1 tablespoon baking powder

2 large eggs

1 cup milk

1 teaspoon vanilla extract

1/2 teaspoon peppermint extract

1 cup semi-sweet chocolate chips

1/3 cup mini marshmallows, optional

2 tablespoons crushed candy canes, optional


Instructions

1. Preheat the oven to 375°F and line a 12-cup muffin pan with paper liners.

2. In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt.

3. In a separate bowl, whisk the eggs, milk, melted butter, vanilla extract, and peppermint extract until smooth.

4. Pour the wet ingredients into the dry ingredients and stir gently just until combined.

5. Fold in the chocolate chips, being careful not to overmix the batter.

6. Divide the batter evenly among the muffin cups, filling each about three-quarters full.

7. Top with mini marshmallows and crushed candy canes if using.

8. Bake for 18 to 22 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

9. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

Use peppermint extract carefully since a little gives plenty of flavor.

Do not overmix the batter or the muffins can turn dense instead of soft.
