Ingredients
1 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
3/4 cup chopped pecans, toasted
Instructions
1. Beat the butter, brown sugar, and granulated sugar together until smooth and slightly fluffy.
2. Add vanilla extract and mix until incorporated.
3. In a separate bowl, whisk together flour and salt, then add to the butter mixture.
4. Fold in the chopped pecans evenly.
5. Scoop tablespoon-sized dough balls, gently roll and flatten on a baking sheet. Chill for 30 minutes.
6. Bake at 350°F for 12-14 minutes until edges turn golden.
7. Cool on the baking sheet for 5 minutes before transferring to a rack.
Notes
Toast your pecans beforehand for deeper flavor—5 minutes at 350°F does the trick.
Don’t overmix once flour is added or the cookies may toughen.
Chilling the dough prevents the cookies from spreading too much in the oven.
