These Pecan Pie Cheesecake Bars are rich, creamy, buttery, and perfect for anyone who loves an easy dessert with holiday flavor. A graham cracker crust holds a smooth cheesecake layer and a gooey pecan pie topping, making this easy recipe a beautiful choice for Thanksgiving desserts, Christmas baking, party food ideas, potluck treats, and make-ahead dessert ideas.

Ingredients

2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

16 ounces cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup light brown sugar, packed

1/2 cup light corn syrup

2 large eggs

3 tablespoons unsalted butter, melted

2 tablespoons heavy cream

1 teaspoon vanilla extract

1/4 teaspoon salt

1 1/2 cups chopped pecans

Instructions

1. Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper.

2. Mix graham cracker crumbs, granulated sugar, and melted butter until evenly combined.

3. Press the crust mixture firmly into the prepared pan and bake for 8 minutes.

4. Beat softened cream cheese and granulated sugar until smooth and creamy.

5. Add eggs one at a time, then mix in vanilla extract until just combined.

6. Spread the cheesecake filling evenly over the warm crust.

7. Whisk brown sugar, corn syrup, eggs, melted butter, heavy cream, vanilla, and salt until smooth.

8. Fold in the chopped pecans.

9. Gently spoon the pecan mixture over the cheesecake layer and spread it evenly.

10. Bake for 35 to 40 minutes, until the edges are set and the center has a slight jiggle.

11. Cool completely at room temperature, then refrigerate for at least 4 hours.

12. Lift from the pan using the parchment paper, slice into bars, and serve chilled.

Notes

Use softened cream cheese so the cheesecake layer mixes smoothly without lumps.

Chill the bars fully before slicing for clean, neat squares.

Toast the pecans before adding them to the topping for a deeper nutty flavor.
