Ingredients
1 1/2 cups finely chopped toasted pecans
1 cup graham cracker crumbs
1/2 cup brown sugar
1/3 cup maple syrup
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1 pinch salt
1 cup white chocolate chips
1 tablespoon coconut oil
Instructions
1. Preheat your oven to 350°F (175°C). Spread pecans on a baking sheet and toast for 7–9 minutes until fragrant. Let cool and chop finely.
2. In a bowl, mix chopped pecans, graham cracker crumbs, brown sugar, maple syrup, vanilla extract, cinnamon, and salt until a thick, sticky dough forms.
3. Roll the dough into 20 evenly-sized balls using a small scoop or tablespoon. Place on a parchment-lined tray and freeze for 30 minutes.
4. In a microwave-safe bowl, melt white chocolate chips and coconut oil in 20-second intervals, stirring until smooth.
5. Dip each chilled ball into the melted chocolate using a fork, allowing excess to drip off. Set on parchment paper.
6. Let chocolate harden at room temperature or refrigerate for 10 minutes. Serve or store as needed.
Notes
Toasting pecans enhances flavor—don’t skip this step if you have time.
To make ahead, freeze and thaw overnight before serving.
For a boozy twist, add 1 tablespoon bourbon and reduce maple syrup slightly.
