Ingredients
1 cup old-fashioned oats
1 cup milk
1/2 cup Greek yogurt
1 cup diced peaches
1 tablespoon chia seeds
1 tablespoon maple syrup
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 pinch salt
1/4 cup granola
2 tablespoons chopped pecans
Instructions
1. In a medium bowl or two jars, combine the old-fashioned oats, milk, Greek yogurt, chia seeds, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, and salt. Stir well until fully mixed.
2. Fold in the diced peaches, making sure they are evenly distributed throughout the oat mixture.
3. Cover the bowl or seal the jars and refrigerate for at least 6 hours, preferably overnight.
4. In the morning, stir the oats well. Add a small splash of milk if you want a looser texture.
5. Top with granola, chopped pecans, and extra peaches if desired, then serve chilled.
Notes
Use ripe fresh peaches for the best flavor, or substitute thawed frozen peaches if fresh are not available.
Add crunchy toppings right before serving so they stay crisp and do not soften in the fridge.
For a sweeter breakfast, drizzle in a little extra maple syrup after chilling and stirring.
