Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1 tablespoon granulated sugar
24 ounces cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
3 large eggs
4 cups sliced peaches (fresh or frozen)
1/2 cup brown sugar
2 tablespoons butter
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon lemon juice
1 tablespoon cornstarch mixed with 2 tablespoons water
1/2 cup all-purpose flour
1/3 cup brown sugar
1/2 teaspoon cinnamon
3 tablespoons butter, melted
Whipped cream for garnish (optional)
Crushed graham cracker for garnish (optional)
Instructions
1. Combine graham cracker crumbs, melted butter, and sugar. Press into a springform pan and chill.
2. Beat cream cheese, granulated sugar, and vanilla until smooth. Add eggs one at a time.
3. Pour filling over crust and smooth the top.
4. Bake at 325°F for 50–60 minutes until edges set and center jiggles slightly. Cool gradually, then refrigerate.
5. In a skillet, cook peaches with brown sugar, butter, cinnamon, nutmeg, and lemon juice until soft.
6. Add cornstarch slurry to the peaches and simmer until thick and glossy. Let cool.
7. Make crumb topping with flour, brown sugar, cinnamon, and melted butter. Bake separately until golden.
8. Top cheesecake with cooled peach mixture and sprinkle with baked crumble topping.
9. Chill until ready to serve. Garnish with whipped cream and crushed graham if desired.
Notes
Always use room temperature cream cheese to avoid lumps.
Bake the crumb topping separately to keep it crunchy.
Let the cheesecake chill at least 4 hours—overnight is best for structure and flavor.
