Ingredients
250g paneer
1/2 cup plain yogurt
1 teaspoon turmeric powder
1 1/2 teaspoons garam masala
1 teaspoon smoked paprika
1/2 teaspoon salt
1 tablespoon ginger garlic paste
1 tablespoon oil
1 medium onion, chopped
2 cloves garlic, minced
1 inch ginger, grated
1/2 teaspoon cumin seeds
1 teaspoon coriander powder
1/2 teaspoon chili powder
1 cup crushed tomatoes
1/2 cup cashews, soaked
1 tablespoon butter
1 teaspoon sugar
1 teaspoon kasuri methi (dried fenugreek leaves)
Salt to taste
Fresh cilantro for garnish
Instructions
1. Cut paneer into cubes and mix with yogurt, turmeric, garam masala, paprika, salt, and ginger garlic paste. Let it marinate for at least 30 minutes.
2. Grill or broil the paneer until it’s golden and slightly charred.
3. Heat oil in a pan. Sauté chopped onions until golden brown. Add garlic, ginger, cumin seeds, coriander, and chili powder.
4. Add crushed tomatoes and simmer for 10-15 minutes until thick and deep red.
5. Blend the sauce until smooth. Return it to the pan.
6. Blend soaked cashews with water until creamy and add to the sauce along with butter, sugar, and kasuri methi.
7. Stir the sauce, then gently fold in grilled paneer. Simmer for 5 minutes.
8. Garnish with fresh cilantro before serving.
