Ingredients
1 cup fresh orange juice
1 tablespoon orange zest
3/4 cup granulated sugar
3 large eggs
1 tablespoon fresh lemon juice
6 tablespoons unsalted butter
1 pinch salt
Instructions
1. Wash and dry the oranges, then finely zest them and squeeze the juice.
2. In a medium heatproof bowl or saucepan, whisk together the orange juice, orange zest, sugar, eggs, lemon juice, and salt until fully combined.
3. Cook the mixture over low heat, or over a double boiler, stirring constantly so the eggs do not scramble.
4. Continue stirring for 8 to 12 minutes, until the curd thickens enough to coat the back of a spoon.
5. Remove from the heat and add the butter one tablespoon at a time, stirring until fully melted and smooth.
6. Strain the curd through a fine mesh sieve into a clean bowl or jar for the smoothest texture.
7. Let it cool slightly, then cover and refrigerate until chilled and set.
Notes
Use fresh oranges for the best flavor since bottled juice can taste flat or overly sweet.
Keep the heat low and stir constantly to prevent lumps or scrambled eggs.
Chill the curd fully before serving if you want the thickest, most spreadable texture.
