Ingredients

4 boneless skinless chicken breasts

1 teaspoon kosher salt

1/2 teaspoon black pepper

2 tablespoons olive oil

2 tablespoons butter

4 cloves garlic, minced

3/4 cup chicken broth

2 tablespoons Dijon mustard

3 tablespoons fresh lemon juice

1 teaspoon lemon zest

1/2 cup heavy cream

1 teaspoon honey

1 teaspoon fresh thyme leaves

2 tablespoons chopped fresh parsley


Instructions

1. Pat the chicken dry and season both sides with salt and black pepper.

2. Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 4 to 5 minutes per side until golden. Transfer to a plate.

3. Lower the heat to medium and add butter to the same skillet. Stir in the garlic and cook for about 30 seconds until fragrant.

4. Pour in the chicken broth, then whisk in Dijon mustard, lemon juice, lemon zest, honey, and thyme. Scrape the bottom of the skillet to lift the browned bits into the sauce.

5. Return the chicken to the skillet with any juices from the plate. Simmer for 6 to 8 minutes, or until the chicken reaches 165°F.

6. Reduce the heat to low and stir in the heavy cream. Simmer gently for 1 to 2 minutes until the sauce is smooth and lightly thickened.

7. Garnish with fresh parsley and serve warm with rice, mashed potatoes, pasta, or vegetables.

Notes

Pound the chicken to an even thickness so it cooks evenly and stays juicy.

Keep the heat low after adding the cream to prevent the sauce from separating.
