Description

This One Pot Chicken Dumpling Soup is the ultimate comfort food for chilly nights. It’s a quick dinner option that delivers tender chicken, fluffy dumplings, and rich broth—all made in a single pot. Whether you’re looking for easy dinner ideas, cozy soup recipes, or hearty comfort meals, this is one you’ll keep coming back to. Perfect for family dinners, cold weather, or anytime you need a warm, satisfying bowl.

Ingredients

1 tablespoon butter

1 small onion, diced

2 carrots, diced

2 celery stalks, diced

2 cloves garlic, minced

1 pound boneless skinless chicken thighs

6 cups chicken broth

2 bay leaves

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

3 tablespoons cold butter, cubed

3/4 cup buttermilk

2 tablespoons chopped fresh parsley

Salt and pepper to taste

Instructions

1. Melt butter in a large Dutch oven over medium heat. Add diced onion, carrots, and celery. Cook for about 8 minutes until softened. Stir in garlic and cook for 1 minute more.

2. Add chicken thighs, chicken broth, and bay leaves. Bring to a boil, then reduce to a simmer. Cover and cook for 25 minutes until chicken is cooked through.

3. Remove chicken, shred with forks, then return to the pot. Season with salt and pepper. Remove bay leaves.

4. In a bowl, mix flour, baking powder, and salt. Cut in cold butter until mixture resembles crumbs. Stir in buttermilk and parsley until just combined.

5. Drop spoonfuls of dough onto the simmering soup. Cover the pot and let dumplings steam for 15 minutes without lifting the lid.

6. Once dumplings are cooked through and fluffy, ladle soup into bowls and garnish with fresh parsley if desired.

Notes

Use a heavy-bottomed Dutch oven to ensure even heat and avoid scorching.

Don’t overmix your dumpling dough—gentle mixing keeps them fluffy.

Keep the lid closed during steaming to help dumplings cook properly.
