Description

This One Pan Teriyaki Chicken with Vegetables is a quick dinner packed with juicy chicken, colorful vegetables, and a glossy homemade teriyaki sauce that makes weeknight cooking feel easy. It is perfect for easy dinner ideas, healthy meal prep, quick family meals, simple chicken recipes, one pan meals, and fresh food ideas when you want something flavorful without a sink full of dishes.

Ingredients

1 1/2 pounds boneless skinless chicken breast, cut into bite-size pieces

2 cups broccoli florets

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup thinly sliced carrots

1 cup snap peas

1/2 red onion, sliced

2 tablespoons olive oil or neutral cooking oil

1/2 cup low-sodium soy sauce

1/4 cup honey or brown sugar

2 tablespoons rice vinegar

1 tablespoon sesame oil

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon cornstarch

2 tablespoons water

1 tablespoon sesame seeds

2 green onions, sliced

Instructions

1. Cut the chicken into bite-size pieces and prepare all vegetables so they cook evenly.

2. In a bowl, whisk soy sauce, honey or brown sugar, rice vinegar, sesame oil, garlic, ginger, cornstarch, and water until smooth.

3. Heat oil in a large skillet over medium-high heat, then add the chicken in a single layer. Cook for 4 to 5 minutes until lightly browned.

4. Add broccoli and carrots first, then cook for 3 minutes to soften slightly.

5. Stir in bell peppers, snap peas, and red onion, then cook for another 3 to 4 minutes until crisp-tender.

6. Pour the teriyaki sauce over the chicken and vegetables. Stir well and simmer for 2 to 4 minutes until the sauce thickens and coats everything.

7. Remove from heat, sprinkle with sesame seeds and green onions, then serve warm over rice, noodles, or cauliflower rice.

Notes

Cut the chicken and vegetables into similar-size pieces so everything cooks evenly.

Do not overcrowd the pan, because the vegetables can steam instead of staying crisp-tender.

For extra sauce, double the teriyaki mixture and simmer until glossy before serving.
