Ingredients

4 bone-in skin-on chicken thighs

1.5 pounds baby Yukon gold potatoes, halved

4 cloves garlic, smashed

2 sprigs fresh rosemary

4 sprigs fresh thyme

1.5 cups chicken broth

2 tablespoons all-purpose flour

2 tablespoons unsalted butter

2 tablespoons olive oil

Salt to taste

Black pepper to taste


Instructions

1. Pat chicken thighs dry and season both sides with salt and pepper.

2. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken skin-side down for 6-7 minutes until golden, then flip and cook for 2 more minutes. Remove and set aside.

3. In the same pan, add halved potatoes, garlic cloves, rosemary, thyme, salt, and pepper. Stir to coat and cook for 3-4 minutes until slightly golden.

4. Nestle chicken thighs over the potatoes. Transfer the pan to a preheated oven at 400°F and roast for 30–35 minutes until chicken is cooked through and potatoes are tender.

5. Remove chicken and potatoes from the pan and keep warm. Discard herb stems and place the pan back on the stove over medium heat.

6. Whisk in the flour to the remaining drippings to create a roux. Slowly pour in chicken broth while whisking until smooth.

7. Simmer the gravy until thickened, about 5-7 minutes. Stir in butter for a glossy finish.

8. Serve chicken and potatoes with gravy poured over the top or on the side.

Notes

Use bone-in, skin-on chicken for maximum flavor and crispiness.

Make sure to scrape up all the brown bits when making the gravy—they add deep flavor.
