Ingredients

4 bone-in, skin-on chicken thighs

1.5 pounds Yukon gold potatoes, halved

1 small yellow onion, diced

3 cloves garlic, minced

2 tablespoons all-purpose flour

2 tablespoons butter

1 tablespoon olive oil

1.5 cups chicken broth

1 teaspoon salt

0.5 teaspoon black pepper

4 sprigs fresh thyme

1 tablespoon chopped parsley


Instructions

1. Season chicken with salt and pepper.

2. Heat olive oil and butter in a skillet over medium-high heat. Sear chicken skin-side down until golden and crisp, about 6-7 minutes. Flip and cook another 3 minutes. Remove from pan.

3. Place halved potatoes cut-side down in the same pan. Cook for 5-6 minutes undisturbed. Add diced onion and cook 2 more minutes.

4. Add minced garlic and a bit more butter. Cook for 30 seconds until fragrant. Sprinkle in flour and stir to coat, cooking for 1 minute.

5. Slowly pour in chicken broth while stirring. Scrape up browned bits. Add thyme. Return chicken (skin-side up) to the skillet. Reduce heat, cover, and simmer for 25–30 minutes.

6. Uncover, spoon gravy over chicken, and simmer 5 more minutes to thicken. Sprinkle with fresh parsley and serve.

Notes

Sear the chicken well—it’s key to deep flavor in both the meat and the gravy.

Use Yukon gold potatoes for the best texture that holds up in simmering.

If the gravy gets too thick, add a splash of broth while reheating.
