Ingredients

1 lb ground beef

1 small yellow onion, diced

1 medium bell pepper, diced

2 cloves garlic, minced

2 tbsp taco seasoning

10 oz diced tomatoes with green chiles, drained slightly

1 cup corn kernels

8 oz sour cream

1/2 cup mayonnaise

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 jalapeño, finely diced, optional

1 can refrigerated biscuit dough, 16.3 oz

2 tbsp chopped fresh cilantro


Instructions

1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.

2. Add the ground beef to a large skillet over medium heat and cook until browned, breaking it into crumbles. Drain excess grease.

3. Stir in the onion, bell pepper, and garlic. Cook for 3 to 4 minutes, until softened and fragrant.

4. Add the taco seasoning, diced tomatoes with green chiles, and corn. Stir well and simmer for 3 to 5 minutes, until the mixture is flavorful and not watery.

5. Press the biscuit dough evenly into the bottom of the prepared baking dish.

6. In a mixing bowl, stir together the sour cream, mayonnaise, cheddar cheese, Monterey Jack cheese, and jalapeño if using.
