Ingredients
2 cups Medjool dates
1 cup raw almonds
1/2 cup unsweetened cocoa powder
1 teaspoon vanilla extract
1/4 teaspoon sea salt
1/4 cup vegan chocolate chips (optional)
Instructions
1. Pit and soak dates in warm water for 10 minutes if dry, then drain.
2. Pulse almonds in a food processor until finely ground.
3. Add cocoa powder, sea salt, and vanilla to the almonds and pulse again.
4. Add dates to the processor and blend until mixture forms a sticky dough.
5. Fold in chocolate chips if using.
6. Line an 8×8 pan with parchment paper and press the mixture in firmly.
7. Refrigerate for at least 1 hour until set.
8. Lift from pan, slice into squares, and serve.
Notes
If mixture feels dry, add an extra date or two.
Use a sharp knife dipped in warm water for clean cuts.
You can freeze the brownies for longer storage.
