Ingredients

1 tablespoon olive oil

1 medium onion, chopped

2 carrots, sliced

2 celery stalks, sliced

3 cloves garlic, minced

1.5 pounds bone-in, skinless chicken thighs

6 cups chicken stock

4 medium Yukon Gold potatoes, diced into 1-inch cubes

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes

1/4 cup fresh parsley, chopped


Instructions

1. Heat olive oil in a large Dutch oven over medium heat. Add chopped onion, carrots, and celery. Cook until softened, about 5–7 minutes.

2. Add minced garlic and stir for another minute until fragrant.

3. Place chicken thighs into the pot and let them sear slightly for 2–3 minutes.

4. Pour in the chicken stock and scrape up any browned bits from the bottom of the pot.

5. Add the diced potatoes and bring to a gentle boil.

6. Reduce heat, cover, and let simmer for 35–40 minutes, until potatoes are tender and chicken is cooked through.

7. Remove chicken, shred with two forks, and return to the pot.

8. Stir in parsley, crushed red pepper, and black pepper. Taste and adjust seasoning as needed.

Notes

Yukon Gold potatoes hold their shape and thicken the soup naturally — avoid russets which break down too much.

Use bone-in chicken thighs for deeper flavor and tenderness — remove bones when shredding.

If reheating, add a splash of water or broth to loosen the texture without losing flavor.
