Description

Mornings get so much easier with these Mouthwatering Protein Waffles: a quick breakfast that tastes like a treat but is secretly packed with protein to keep you full and energized. Crisp on the outside and fluffy inside, they’re perfect when you need healthy snack options, cozy breakfast ideas, or even dinner ideas on a busy night. This easy recipe is made with simple ingredients, high-protein Greek yogurt, and whey protein powder, giving you nourishing food ideas that feel comforting, satisfying, and totally weekday-friendly.

Ingredients

1 cup oat flour

1 scoop (30 g) vanilla or unflavored whey protein powder

1 1/2 teaspoons baking powder

1/4 teaspoon fine sea salt

1/2 teaspoon ground cinnamon

2 tablespoons granulated sweetener of choice

2 large eggs

2 large egg whites

3/4 cup plain Greek yogurt

1/2 cup unsweetened almond milk (or other milk of choice)

1 teaspoon vanilla extract

1 tablespoon melted coconut oil or avocado oil

2 tablespoons maple syrup, for serving

1 cup fresh berries, for serving

Nonstick cooking spray, as needed for the waffle iron

Instructions

1. Preheat your waffle iron according to the manufacturer’s instructions and lightly grease it with nonstick cooking spray so it’s ready when the batter is mixed.

2. In a medium bowl, whisk together the oat flour, whey protein powder, baking powder, fine sea salt, ground cinnamon, and granulated sweetener until everything is evenly combined.

3. In a separate large bowl, whisk the eggs and egg whites until lightly frothy, then add the Greek yogurt, almond milk, vanilla extract, and melted coconut oil, whisking until the mixture is smooth.

4. Pour the dry ingredients into the wet ingredients and gently whisk or stir until just combined; the batter should be thick but pourable, so add a splash more milk if it seems too thick.

5. Spoon or pour the batter onto the preheated waffle iron, using just enough to cover the waffle plates without overflowing, then close the lid and cook until the waffles are deeply golden and crisp on the edges.

6. Carefully remove the cooked waffle and repeat with the remaining batter, greasing the waffle iron between batches as needed to prevent sticking.

7. Serve the warm waffles with maple syrup and fresh berries, plus extra Greek yogurt or nut butter on top if you’d like an additional boost of protein.

Notes

For even fluffier waffles, let the batter rest for 5 minutes before cooking; this gives the oat flour and protein powder time to hydrate.

If you switch to a plant-based protein powder, start with a little extra milk on hand and adjust the batter consistency so it stays thick but pourable.

To meal prep, cool the waffles completely, then freeze them in a single layer before storing in a bag or container; reheat in a toaster or oven to bring back their crisp edges.
