Ingredients

2 tbsp olive oil

1 medium onion, diced

4 cloves garlic, minced

2 lb ground turkey

2 medium zucchini, chopped

2 bell peppers, chopped

8 oz cream cheese, cubed

1/2 cup heavy cream

1 1/2 tsp Italian seasoning

1 1/2 tsp kosher salt

1/2 tsp black pepper

1 1/2 cups shredded mozzarella

1 cup shredded cheddar


Instructions

1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

2. Heat 2 tbsp olive oil in a large skillet over medium heat. Add the diced onion and cook 4–5 minutes until softened.

3. Add the minced garlic and cook 30 seconds, just until fragrant.

4. Add 2 lb ground turkey. Cook 7–9 minutes, breaking it up, until no pink remains.

5. Stir in Italian seasoning, kosher salt, and black pepper.

6. Add the chopped zucchini and bell peppers. Cook 3–4 minutes until slightly tender (don’t overcook).

7. Reduce heat to low. Add the cubed cream cheese and heavy cream, stirring until fully melted and creamy.

8. Spread the turkey mixture evenly into the baking dish.

9. Top with shredded mozzarella and shredded cheddar.

10. Bake uncovered 20–25 minutes until bubbly and lightly golden. Rest 5–10 minutes before slicing into 6 servings.

Notes

For a thicker casserole, let it rest the full 10 minutes before slicing—this helps it set cleanly.

To avoid a watery bake, don’t cook the zucchini too long in the skillet (it finishes in the oven).

Swap cheeses if you’d like, but keep the total cheese amount the same for the best texture.
