Ingredients
1 pound flank steak, thinly sliced
2 tablespoons soy sauce (for marinade)
1 tablespoon cornstarch (for marinade)
1 tablespoon oil (for marinade)
8 ounces lo mein or egg noodles
1 red bell pepper, thinly sliced
3 cloves garlic, minced
1 tablespoon fresh ginger, minced
1/4 cup low sodium soy sauce
2 tablespoons hoisin sauce
2 tablespoons brown sugar
1/4 cup water
1 tablespoon cornstarch
2 tablespoons oil (for cooking)
2 green onions, chopped
2 tablespoons crushed peanuts
Instructions
1. Slice flank steak thinly against the grain and marinate with soy sauce, cornstarch, and oil.
2. Whisk together soy sauce, hoisin sauce, brown sugar, garlic, ginger, water, and cornstarch in a small bowl.
3. Cook the noodles until al dente, then drain and set aside.
4. Heat oil in a wok or large skillet, and sear the beef in batches until browned and cooked through.
5. Sauté sliced red bell peppers in the same pan until just tender-crisp.
6. Add cooked noodles, beef, and sauce to the pan. Toss until everything is evenly coated and the sauce has thickened.
7. Remove from heat, top with chopped green onions and crushed peanuts, and serve hot.
Notes
Always slice the beef thin and against the grain for tenderness.
