Ingredients

1 cup pumpkin puree

1/2 cup Greek yogurt (whole milk preferred)

3/4 cup brown sugar

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger


Instructions

1. Preheat oven to 350°F and line an 8×8-inch baking dish with parchment paper.

2. In a large bowl, whisk together pumpkin puree, Greek yogurt, brown sugar, eggs, and vanilla extract.

3. Sprinkle flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger over the wet mix and stir until just combined.

4. Pour batter into prepared dish and smooth the top.

5. Bake for 28–32 minutes until a toothpick comes out clean with a few moist crumbs.

6. Cool in the pan for 15 minutes, then lift out and cool completely before slicing.

Notes

Use pure pumpkin puree, not pie filling, for the best texture and flavor.

Don’t overmix the batter—stir until just combined to keep it tender.
