Ingredients

2 medium sweet potatoes, peeled and cubed

2 tablespoons white miso paste

1 tablespoon maple syrup

1 tablespoon soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 cup dry quinoa

2 cups water

1 cup shelled edamame

1 1/2 cups shredded red cabbage

1 cup sliced cucumber

1 cup shredded carrots

1 avocado, sliced

2 green onions, sliced

1 tablespoon sesame seeds

1 lime, cut into wedges

1 tablespoon olive oil

1/4 teaspoon black pepper


Instructions

1. Preheat the oven to 425°F and line a baking sheet with parchment paper.

2. Add the cubed sweet potatoes to a bowl and toss them with olive oil and black pepper.

3. In a small bowl, whisk together the miso paste, maple syrup, soy sauce, sesame oil, garlic, and ginger until smooth.

4. Spread the sweet potatoes on the baking sheet and brush or toss them with the miso glaze.

5. Roast for 25 to 30 minutes, turning once halfway through, until tender and caramelized on the edges.

6. While the sweet potatoes roast, rinse the quinoa and combine it with water in a saucepan.

7. Bring the quinoa to a boil, reduce the heat, cover, and simmer for 15 minutes until the water is absorbed.

8. Remove the quinoa from the heat, let it sit for 5 minutes, then fluff it with a fork.

9. Cook or thaw the edamame if needed, and prep the cabbage, cucumber, carrots, avocado, and green onions.

10. Divide the quinoa among 4 bowls and arrange the roasted sweet potatoes, edamame, cabbage, cucumber, carrots, and avocado on top.

11. Sprinkle with green onions and sesame seeds, then serve with lime wedges for squeezing over the bowls.

Notes

Use white miso for the mildest and slightly sweet flavor that pairs best with sweet potatoes.

Store the components separately for meal prep so the vegetables stay crisp and fresh.

Add tofu, chickpeas, or a soft-boiled egg if you want to make the bowls even more filling.
