Ingredients
1/4 cup white miso paste
3 tablespoons mirin
1 tablespoon soy sauce
1 tablespoon sugar
4 cod fillets (about 5–6 oz each)
Instructions
1. In a small saucepan over low heat, combine white miso paste, mirin, soy sauce, and sugar. Stir just until sugar dissolves and mixture is smooth.
2. Let the glaze cool slightly before using.
3. Place cod fillets in a shallow dish or zip-top bag and coat with the miso glaze.
4. Refrigerate and marinate for at least 30 minutes or up to 1 hour.
5. Preheat broiler on high and line a baking sheet with foil; lightly oil the foil.
6. Remove cod from marinade and place on baking sheet. Do not remove excess glaze.
7. Broil for 6–8 minutes until the glaze is bubbling and slightly charred and the fish flakes easily.
8. Let rest for 2 minutes before serving hot.
