1 cup crushed chocolate sandwich cookies

2 tablespoons melted butter

16 oz cream cheese

1/2 cup granulated sugar

1/4 cup sour cream

1 tablespoon red food coloring

2 large eggs

Optional: whipped cream or melted chocolate for topping


Instructions

1. Preheat oven to 325°F (163°C) and line a 12-cup muffin tin with paper liners.

2. Mix crushed cookies with melted butter and press 1 tablespoon into each liner. Bake crusts for 5 minutes.

3. Beat cream cheese until smooth. Add sugar and beat until creamy.

4. Blend in sour cream, vanilla extract, and cocoa powder.

5. Stir in red food coloring until evenly tinted.

6. Add eggs one at a time, beating gently just until combined.

7. Spoon about 2 1/2 tablespoons of batter into each muffin cup.

8. Bake for 18–20 minutes or until centers are set.

9. Cool completely in the pan, then refrigerate for 2 hours or overnight.

10. Top with whipped cream or melted chocolate before serving.

Notes

Make sure cream cheese is at room temperature for a smoother filling.

Do not overmix the eggs to avoid cracks in the cheesecake.
