Ingredients
1 can sweetened condensed milk
2 large eggs
1/4 cup unsalted butter, melted
1/2 cup milk
1/2 cup fresh lemon juice
1 tablespoon lemon zest
1/2 cup all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt
2 tablespoons granulated sugar
2 tablespoons powdered sugar, for dusting
Instructions
1. Preheat the oven to 350°F and grease a 12-cup muffin tin well.
2. In a large mixing bowl, whisk together the sweetened condensed milk, eggs, melted butter, milk, lemon juice, lemon zest, and vanilla extract until smooth.
3. Add the flour, salt, and granulated sugar, then whisk just until the batter is fully combined and smooth.
4. Pour the batter evenly into the prepared muffin cups, filling each about three-quarters full.
5. Bake for 20 to 25 minutes, or until the tops are lightly golden and the centers are set with a slight jiggle.
6. Let the pies cool in the pan for 10 minutes, then gently loosen and transfer them to a wire rack.
7. Serve slightly warm or chilled, and dust with powdered sugar before serving.
Notes
Fresh lemon juice and zest give the best flavor, so skip bottled juice when possible.
Do not overbake or the pies can lose their soft creamy texture.
Chill the pies before serving if you want a firmer texture more like classic lemon pie.
