Ingredients

200g feta cheese block

1 cup cherry tomatoes

3 large eggs

2 tablespoons olive oil

2 garlic cloves, minced

1 small shallot, finely chopped

1/2 teaspoon dried oregano

1/4 teaspoon crushed red pepper flakes

Salt, to taste

Fresh parsley or basil, for garnish


Instructions

1. Preheat oven to 375°F (190°C).

2. In an oven-safe skillet, heat olive oil over medium heat and sauté garlic and shallots until softened.

3. Add cherry tomatoes and cook until they start to blister and release their juices.

4. Stir in oregano, red pepper flakes, and a pinch of salt. Simmer briefly.

5. Nestle feta chunks into the tomato base and let simmer for 2 more minutes.

6. Create small wells and crack eggs into them.

7. Bake in oven for 8–10 minutes until whites are set and yolks are slightly runny.
