Ingredients

1 lb ground beef

2 cups broccoli florets

1 cup julienned carrots

2 cups cooked white rice

2 cloves garlic, minced

1 teaspoon fresh ginger, minced

1/4 cup low sodium soy sauce

1/4 cup water

2 tablespoons brown sugar

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon cornstarch

2 tablespoons cold water

2 tablespoons green onions, chopped

1 teaspoon sesame seeds (optional)


Instructions

1. Heat a large skillet over medium heat with a drizzle of oil. Add garlic and ginger, sauté for 30 seconds until fragrant.

2. Add ground beef, breaking it up with a wooden spoon. Cook until browned and no longer pink.

3. In a bowl, whisk together soy sauce, 1/4 cup water, brown sugar, rice vinegar, and sesame oil. Pour the sauce into the beef and stir.

4. Mix cornstarch with 2 tablespoons cold water to make a slurry. Pour into the skillet and stir until the sauce thickens.

5. Add broccoli and carrots to the skillet. Cover and let steam for 3–4 minutes until just tender but still crisp.

6. Serve over cooked white rice and garnish with green onions and sesame seeds if desired.

Notes

Let the beef brown undisturbed for a few minutes before stirring to get more flavor.

Adjust veggie cook time depending on how soft or crisp you like them.

Double the sauce if you prefer it extra sticky or want more for rice soaking.
