Ingredients
5 pounds russet potatoes
8 ounces cream cheese, softened
1 cup sour cream
1/2 cup unsalted butter, softened
2 large eggs
2 cups shredded sharp cheddar cheese
1 1/2 teaspoons salt (plus more for boiling water)
1/2 teaspoon black pepper
2 tablespoons chopped chives (optional)
Instructions
1. Peel and chop potatoes, then boil in salted water until tender.
2. Drain and mash the potatoes while hot until smooth.
3. Add cream cheese, sour cream, and butter to the mashed potatoes. Mix until creamy.
