Ingredients
1.5 pounds boneless skinless chicken thighs
2 tablespoons butter
1 small yellow onion, chopped
4 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
4 cups chicken broth
1 cup heavy cream
3/4 cup shredded parmesan cheese
1 teaspoon dried thyme
1/2 teaspoon dried basil
1/4 teaspoon red pepper flakes (optional)
Salt and black pepper to taste
Instructions
1. Heat butter in a large Dutch oven over medium heat. Sear chicken thighs until golden on both sides. Remove and set aside.
2. In the same pot, sauté chopped onion and garlic until softened. Add sun-dried tomatoes and cook for 2-3 minutes.
3. Pour in chicken broth. Return chicken to pot. Simmer uncovered for 20-25 minutes until fully cooked.
4. Remove chicken, shred with forks, and return to the pot.
5. Lower heat. Stir in heavy cream, parmesan, thyme, basil, and chili flakes. Simmer another 5-10 minutes until thickened.
6. Taste and adjust seasoning with salt and pepper. Serve warm.
Notes
Use room temperature cream to avoid curdling.
Let the soup sit a few minutes before serving to thicken naturally.
Don’t skip the sun-dried tomatoes—they add essential depth and tang.
