Ingredients

8 rice paper wrappers

1 ripe mango, peeled and sliced into strips

1 red bell pepper, thinly sliced

1 small carrot, julienned

1/2 cup cooked rice vermicelli noodles

1/4 cup fresh mint leaves

1/4 cup fresh cilantro leaves

1/4 cup almond butter

1 tablespoon lime juice

1 tablespoon maple syrup

1 tablespoon tamari or soy sauce

2–3 tablespoons warm water


Instructions

1. Prepare the mango, bell pepper, and carrot by slicing them into thin strips.

2. Cook the rice noodles according to package instructions, rinse with cold water, and drain well.

3. Fill a shallow dish with warm water. Dip one rice paper wrapper for 10–15 seconds until softened but still slightly firm.

4. Place the softened wrapper on a damp wooden board. Add a small pile of noodles, mango, carrot, red pepper, mint, and cilantro.

5. Fold in the sides of the wrapper, then roll tightly from the bottom up.

6. In a small bowl, whisk together almond butter, lime juice, maple syrup, tamari, and warm water until smooth and pourable.

7. Repeat the process with the remaining wrappers and filling ingredients.

8. Serve the spring rolls fresh with almond butter dipping sauce on the side.

Notes

Don’t over-soak the rice paper; it will continue to soften after removing from water.

Use a damp wooden cutting board to prevent sticking and tearing.

Adjust the dipping sauce thickness by adding more or less warm water.
