Ingredients

1 cup pink dragon fruit pulp

1/4 cup chia seeds

2 ripe mangoes, peeled and cubed

1 cup Greek yogurt (plain or vanilla)

Fresh mango chunks for topping


Instructions

1. Blend dragon fruit pulp until smooth.

2. Stir dragon fruit puree with chia seeds in a bowl.

3. Let sit for 15-20 minutes or refrigerate overnight until thickened.

4. Blend mango cubes until smooth to make a puree.

5. Layer dragon fruit chia, yogurt, and mango puree in serving glasses.

6. Repeat layers until glasses are full.
