Ingredients

1 cup unsalted butter, softened

3/4 cup granulated sugar

3/4 cup light brown sugar, packed

1 large egg

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups Lucky Charms cereal, lightly crushed

3/4 cup Lucky Charms marshmallows, divided

1 cup white chocolate chips


Instructions

1. Preheat the oven to 350°F and line baking sheets with parchment paper.

2. Separate some of the Lucky Charms marshmallows and set them aside for topping. Lightly crush the cereal pieces.

3. In a medium bowl, whisk together the flour, baking soda, and salt.

4. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy and fluffy.

5. Add the egg and vanilla extract, then mix until smooth.

6. Add the dry ingredients to the wet ingredients and mix just until a soft dough forms.

7. Fold in the crushed Lucky Charms cereal, part of the marshmallows, and white chocolate chips.

8. Chill the dough for 30 minutes for thicker cookies.

9. Scoop the dough onto the prepared baking sheets, leaving space between each cookie. Press a few reserved marshmallows and extra white chocolate chips on top.

10. Bake for 9 to 11 minutes, or until the edges are lightly golden and the centers still look soft.

11. Let the cookies cool on the baking sheet for 5 minutes, then move them to a wire rack to cool completely.

Notes

For the prettiest cookies, press extra Lucky Charms marshmallows on top right after baking so they stay bright and colorful.

Do not overbake the cookies. Pull them from the oven when the centers still look slightly soft for the best chewy texture.

Chilling the dough helps prevent too much spreading and gives the cookies a thicker bakery-style finish.
