Ingredients

100g almond flour

100g powdered sugar

70g egg whites

70g granulated sugar

1/4 tsp cream of tartar

100g unsalted butter, softened

150g powdered sugar (for buttercream)

1 tbsp fresh lemon juice


Instructions

1. Sift almond flour and powdered sugar together twice to ensure a smooth shell.

2. Whip egg whites until foamy, then slowly add granulated sugar and cream of tartar. Continue whipping until stiff, glossy peaks form.

3. Fold dry mixture into the meringue using careful strokes until batter flows like lava and forms ribbons.

4. Pipe small rounds onto a silicone-lined baking sheet and tap tray to release air bubbles.

5. Let shells rest for 30–60 minutes until a skin forms and they’re no longer tacky to the touch.

6. Bake at 300°F for 14–16 minutes. Let cool completely before removing.

7. Beat butter until fluffy, add powdered sugar gradually, then mix in lemon zest and lemon juice until smooth.

8. Pipe buttercream onto half the shells and sandwich with the other halves.

9. Chill filled macarons for 24 hours to mature and blend flavors.
