Ingredients
1 box lemon cake mix (15.25 oz)
1 egg
1/2 cup unsalted butter, melted
8 oz cream cheese, softened
1 1/2 cups powdered sugar, divided
2 tablespoons fresh lemon juice
Instructions
1. Preheat your oven to 350°F. Grease or line a 9×9 glass baking pan with parchment paper.
2. Mix lemon cake mix, melted butter, and egg in a large bowl until a thick dough forms.
3. In a separate bowl, beat cream cheese until smooth. Add 1 cup powdered sugar and mix until creamy.
4. Drop spoonfuls of the cream cheese mixture over the dough and gently swirl with a knife — do not overmix.
5. Spread evenly in the prepared pan and bake for 25–28 minutes, until edges are golden but center is still soft.
6. Cool completely in the pan.
7. Whisk remaining 1/2 cup powdered sugar with lemon juice to make a glaze and drizzle over the bars.
8. Let glaze set for 10–15 minutes before slicing and serving.
Notes
Use room temperature cream cheese to avoid lumps.
Do not overbake — the center should be slightly underdone for the perfect gooey texture.
Always use fresh lemon juice for the glaze — it brightens the flavor.
