Ingredients
2 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
1 3/4 cups granulated sugar
4 large eggs
1 tablespoon lemon zest
1/4 cup fresh lemon juice
1 teaspoon vanilla extract
3/4 cup whole milk
1/2 cup sour cream
1 1/2 cups fresh blueberries
8 ounces cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
Instructions
1. Preheat the oven to 350°F and grease and line two 8-inch round cake pans.
2. Whisk together the flour, baking powder, and salt in a medium bowl.
3. In a large bowl, beat the butter and granulated sugar until pale and fluffy.
4. Add the eggs one at a time, beating well after each addition. Mix in the lemon zest, lemon juice, and vanilla extract.
5. Add the dry ingredients in three additions, alternating with the milk and sour cream, and mix just until combined.
6. Gently fold in the blueberries.
7. Divide the batter evenly between the pans and bake for 28 to 32 minutes, or until a toothpick inserted in the center comes out clean.
8. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
9. For the frosting, beat the cream cheese and butter until smooth. Add the powdered sugar gradually, then mix in the lemon juice and lemon zest until creamy.
10. Place one cake layer on a serving plate, spread frosting on top, add the second layer, and frost the top and sides of the cake.
11. Chill the cake for 20 to 30 minutes before slicing for the cleanest layers.
Notes
Use room temperature butter, eggs, cream cheese, milk, and sour cream for the smoothest batter and frosting.
Toss the blueberries lightly with a little flour if you want extra help keeping them from sinking.
Chill the frosted cake before slicing so the layers stay neat and the frosting holds its shape better.
